1, Pour warm water into a small bowl.
2. Gently stir in sugar and yeast.
3. Let sit to be sure the yeast is active.
4. In a large bowl, measure out flour and salt.
5. Stir together well.
6. Add the water / yeast mixture to the flour / salt mixture.
7. Mix with a wooden spoon until all ingredients are wet. Do not over mix.
8. Leave dough in the bowl (in a warm - not drafty - location) cover loosely with saran coated with cooking spray or with a dish towel. Allow to rise for about 2 hours or until doubled in size.
9. The dough can now be stored in the fridge or you can use it immediately.
NOTE: I have had the best luck baking all the loaves immediately and freezing them.
To bake:
1. Preheat oven to 450.
2. Place a baking sheet in the oven.
3. Divide the dough into roughly 4 balls.
4. Knead for about a minute on a lightly floured surface with floured hands.
NOTE: If the dough is too sticky, this is the time to add more flour.
5. Shape balls of dough as desired (buns, loaf, etc) and place them in greased and floured pans.
6. Allow to rise for another 20-30 minutes.
7. Slash the surface with a sharp serrated knife if you wish.
8. You can add a glaze or special finish at this point. (such as melted butter)
NOTE: If you do not add at least glaze with melted butter, the tops will look less attractive - but they will still taste good.
9. Bake for 30 minutes or golden brown and they sound hollow when tapped.
NOTE: If you add a bowl of boiling water as soon as you put the bread into the oven, the steam will give the loaf a good chewy texture and keep it more moist inside.
10. Remove the bread when baked and cool on a cooling rack.
11. You may store the excess dough in the mixing bowl, loosely covered, in the fridge or somewhere cool until needed (for about 2 weeks).
