In a large brining bag or container large enough to hold your turkey, add all ingredients and mix well. Add turkey breast side down and store in refrigerator for 1-2 days before smoking or roasting.
After brining rinse and do all the other stuff you want to do to it, then (this is important) stuff turkey with apples, oranges, lemons, and onions...and cook it BREAST SIDE DOWN.
