If you cut up the potatoes ahead of time, keep them in cold waterso that they don't discolor.
1. Preheat the oven to 400 F. Scrub the potatoeswell; cut into quarters lengthwise, then crosswise. Place in a bowl; toss withthe oil, paprika, salt and pepper.
2. Arrange the potatoes in a single layeron a baking sheet and bake for 30 minutes, until tender, brown and crispy. Shakeonce during baking. Remove from the baking sheet with a metal spatula and serveon a platter. Sprinkle with a little extra salt, if desired.
Serves 2 to 3.
