Oven heat your favorite buns (the original recipe is with whole wheat buns with mixed cereals). In the mean time prepare your egg in any way you like it - scrambled, sunny side up, whatever (advice: don't make it too runny). Once your buns are ready, spread a nice helping of mascarpone on it and a hand full of watercress. Place the egg on top and you're done.
Tip: ensure that your bun is ready to be dressed as soon as it comes out of the oven to allow the mascarpone to melt.
