healthier version of fried okra- baked in oven, battered with flour and egg
Preheat oven to 450 with baking sheet in oven. Gently smash the okra with a rolling pin. Whisk together the buttermilk and egg in a bowl. Add okra; let stand 3 min. Combine cornmeal with 1/2 tsp salt & pepper in a bowl; dredge okra in mixture. Add 2 tbsp. veg oil to hot pan; tilt pan to coat. Add okra; coat with cooking spray. Bake til crisp, 25-30 min, turning once. FN 2018
