Preheat oven to 375
Toss together the beets, garlic, olive oil, and 1 1/2 teaspoon of thyme. Place in a roasting pan, drizzle with orange juice, cover with foil, and roast for about 45 minutes until the beets are almost tender. Remove foil sprinkle with the remaining thyme and roast another 10 minutes, until the beets are tender.
