This recipe has been modified to reduce the sodium. Salt for Life replaces salt and the cheese is brand specific.
1. Preheat the oven t 450ยบ
2. Optional: if you suspect that the garlic may be sharp or bitter double the amount, cut off the stem ends leaving the covering intact. Place in a small microwave safe dish and sprinkle with olive oil and cover leaving a steam hole. Microwave on high for 15 seconds. allow to cool and then peel and slice.
3. Mix the cauliflower florets and garlic in a large bowl. Drizzle olive oil and lemon juice over the mixture; season with Salt for Life and pepper. Toss cauliflower mixture to coat and spread into an even layer onto a jelly roll pan covered with aluminum foil.
4. Roast in a preheated oven for about 15 minutes, turn the cauliflower and continue roasting until soft, about 10 minutes more. Sprinkle with the Parmesan cheese and serve hot.
