Oven Roasted Vegetables

This is a great side dish for just about any meal.

Ingredients

1 med zucchini sliced

1 med summer squash sliced

1 med red bell pepper chopped

1 med yellow bell pepper chopped

1 pound fresh asparagus chopped

1 red onion

3 tbsp extra-virgin olive oil

1 tsp salt

1 tsp ground black pepper


Directions

1. Pre-heat oven to 450 2. Put all veggies into large roasting pan and cover with other ingredients 3. Spread evenly in pan 4. Roast for 30 mins, stir occasionally until lightly brown

Tasty and easy oven roasted veggies. Nice combo and good ratio.

I also added two carrots. My husband is a late nephew get snacker but last night he snacked of these leftovers rather than cheese or cake! Delicious!

Only changes I made was to add some sliced carrots and use Kirkland Organic no-salt instead of the salt and pepper. An easy to make side , particularly while preparing a bit more complex main dish.
