Preheat oven to 375. Cut vegetables into coarse chunks (about 1-2 inches square). Arrange veggies in large oiled baking dish and toss in other ingredients. Cover tightly with foil and bake 35 minutes. Uncover and turn with large spoon. Add salt and black pepper to taste. Roast at 425 degrees for ~30 minutes or until cooked and browned.
