Wash, peel and slice carrots lengthwise. Place them on a sheet of foil that is large enough to fold over and crimp around them.
Add butter, salt, pepper, and parsley on top of the carrots. Seal the foil edges over the carrots, and place the packet on a baking sheet.
Bake for 15 minutes at 375, or until carrots are to desired consistency.
