1. Rinse trout, pat dry and brush inside with sesame oil
2. Lay fish, spread side open, skin side down in baking pan. Drizzle sherry and sprinkle ginger over fish. Cover tightly.
3. Bake till fish is opaque but still moist-looking in center, 8-10 min. (If fish starts to break apart, cut fillets and lift one piece at a time)
4. Drizzle 2 tbs soy sauce over fish; sprinkle with onions and cilantro.
