Suggest a better descriptionSpray a 13" x 9" pan with cooking spray. In a skillet, cook sausage and drain off the fat.
In a large bowl, beat the eggs, mustard and pepper until mixed well. Stir in the hash browns, 1 cup of the cheese, and the sausage. Pour into a baking dish, cover and refrigerate at least 8 hours, but no longer than 12.
Preheat oven to 350. Remove dish from refrigerator, uncover and top with remaining 1/2 cup of cheese. Bake 45-55 minutes, or until center is set. Cool 10 minutes before serving.
