Clean oysters by rinsing 5-6 times in water with a pinch of salt. Drain in a colander.
Cut each oyster in 3-4 pieces. Add diced scallion and parsley. Add 2 tbsp flour to cover oysters, or more if required.
Add fish sauce, parsley, wine and pepper and mix well.
Cook in a fry pan on high heat in a thin layer for 5 min. Spray with oil then flip and cook a further 5 min.
Drizzle with fish sauce to taste.
