Suggest a better descriptionMelt 3 tablespoons of butter in a large heavy-bottomed pot set over medium heat. Add flour and cook, stirring slowly and constantly, for about 3 minutes. Add onions and cook, stirring, until soft, about 3 to 4 minutes. Combine milk with reserved oyster liquor and add slowly to roux mixture, stirring constantly. The mixture will thicken slightly. Bring to a gentle boil, then reduce heat to medium-low and simmer for 5 minutes. Add oysters, parsley, remaining 3 tablespoons of butter, salt and pepper, and simmer until edges of oysters curl. Remove from heat. Serve warm with crackers or hot French bread.
Makes 6 to 8 servings.
