Prepare noodles: Soak noodles in cold water for 2-3 hours before cooking (cheat: 1 hour in warm water). Noodles should be soft. Prepare all other ingredients before cooking.
In wok or frying pan, heat oil. Add the garlic and toss lightly, followed by egg. Stir quickly to break into small pieces. When cooked, toss in the drained noodles and meat.
Add lime juice, sugar, chili sauce, and fish sauce. Stir fry.
If noodles need some additional cooking, add up to 1/4 cup water and allow to steam a minute or two to soften. Noodles should be soft and translucent.
Just before serving, toss in bean sprouts, onions, cilantro, and peanuts.
