Traditional spanish Paella with meat and seafood
Light the charcoal fire for cook at about 400 degrees for 1 hour (basket almost full)
Chop, cut and prepare all the ingredients
Cook Sausage in Olive oil for about 3-4 minutes
Cook the Squid in olive oil for about 2-3 minutes with a little of the Onion and the Garlic and Salt and Pepper
Set aside these two ingredients
Cook Chicken until browned with Salt and Pepper, and half way add the rest of the Onion and Garlic
Then add the Bell Pepper
Then add the Saffron and Paprika
Then add Tomato and cook about 2 minutes
Then add back the Sausage and Squid
Then add the Stock and bring to a boil
Add Rice and spread evenly
Cook for 10-12 minutes
Then add Shrimp, Mussels and Clams
Cook for another 8-12 minutes until rice is cooked and all the moisture is absorbed (rice may even be a little burned)
Remove from heat and cover and let rest for 10 minutes
Add parsley and squeezed lemons and SERVE.
