Beautiful paella recipe from Patricia Shaw. Stove top recipe.
In a huge skillet or paella pan, heat a little olive oil and salt and pepper the chicken and brown on all sides. Remove. Brown chorizo and remove. Add a little more olive oil and onions. bell pepper and garlic. Stir and saute. Add rice. Stir and brown a bit. Add the cup of liquid with the saffron. Add remaining spices. Add white wine and canned tomatoes. Stir. Put a lid on and simmer till rice is almost done. Remove lid and add clams. Push them down into paella. Add chicken wings and chorizo and artichoke hearts. Might have to add a little chicken broth to the rice if it gets too dry. Sprinkle frozen peas and some chili flakes (like the ones you season pizza with). Paella is ready when shells open. Enjoy.
