Rice, chicken & seafood
In a large skillet heat 2 tbles olive oil, add 2 cloves minced garlic, 1/2 cup chopped onion and 2 links of hot or mild chorizo broken into pieces and castings removed. Saute 3-5 mins. Add 1 cup long grained white rice, 2 cups chicken stock, 1 whole boneless chicken breast, cut into bite sized pieces. Add 1/8 tsp saffron or 1/4 tsp turmeric, 1 tsp salt and pepper to taste. Bring to a boil cover reduce heat and simmer 15 mins. Then add 10 oz frozen petite peas and 1 lb. medium raw shrimp shelled and deveined. Cover and cook 5 mins longer.
