1 In a Paella pan (or a pan that you can transfer from stove to oven) put the oil on medium heat, once hot add the shallots and garlic sauté them for one min,
2 then add the tomato paste add the rice and mix until well blended. add half the stock.
3 incorporate all the sea food except the oysters and clams and mix.add the remaining stock
4 arrange the remaining ingredients on top in a nice shape that includes the clams oysters and veggies.
5 take out of the stove and place in the oven for 40 min at 400 degrees
the best stock is the peel of the shrimp and salt in three cups of water let it boil for half an hour until it reduces to yield 2 cups
