Suggest a better descriptionHeat the oil in a large heavy fry pan (Tagine dish with a lid works great) and fry the rice, stirring frequently until it is golden. Add the tomatoes, garlic, spices and chicken stock; bring to the boil then cover and lower heat to steam. Cover and uncover the dish from time to time to stop from drying out or becoming excessively moist, stirring frequently. When the rice has absorbed most of the liquid add the chicken (meat pulled apart), chorizo slices, prawns, salmon, mussels, peas and any other seafood or meat as required. Steam until shell fish open and fish is cooked through.
Everything gets added to the rice, along with the broth and cooked fairly slowly (covered and steamed)
The choice of ingredients is a personal choice - any combination of sausage, fish and seafood depending on what is available will make a great Paella.
