Marinate the meat overnight with half of the caramelised onions, turmeric, chilli powder, green chilli, ginger and garlic paste, yoghurt, half of mint and coriander leaves and 2 tsp oil.
Heat 1/2cup oil with 2 tbsp ghee, add the whole garam masalas and jeera, stir for a minute, add chilli flakes, add garam masala powder stir. Add the meat with marinade and fry on high heat for 7-8 mins.
Add coriander powder, jeera powder and paprika and fry for 3 mins. Add tomatoes, little mint and coriander and a hanful of caramalised onions and salt and cook on medium heat for 15 mins. Lower the heat to least and cook on slow heat for 1 hour. Remove the oil that floats and keep aside.
Half cook the soaked basmati rice and strain and keep aside. Add salt while cooking the rice.
In a biryani vessel, layer the potatoes, next layer with meat and gravy. Sprinkle coriander and mint leaves. Layer with rice, sprinkle half the meat oil. Again add meat, then rice, then caramalised onions, coriander and mint. Sprinkle saffron with milk, rose water and the meat oil. Cover and cook on absolutely slow flame for half hour.
