1. Heat olive oil and saute onions, carrots and garlic for 5 minutes. Add Cauliflower florets and saute for 2-3 minutes more. Add bay leaf and gradually stuir in almond milk. Bring to a boil and then reduce heat and simmer until cauliflower is completely tender
2. meanwhile cook bacon until crispy and then break into crumbles.
3. Use an iummersion blender and blend the mixture until smooth. Season with salllt and pepper. If soup os too thick addd more chicen broth.
