Easy crock pot recipe. No fuss. Everyone raves about it.
Place pork shoulder fat side up in large crock pot. Cover with apple juice. Add water if necessary. Do not overflow crock and leave a bit of room for the liquid from the fat. Add lid and put on medium overnight. After 4 hours or so, cut the roast in thirds or quarters in the bowl to ensure the inside gets seasoned and continue to cook on low. Turn it down to keep warm when it's soft ad falling off the bone or remove meat to the fridge, straining out fat and liquid and bone. Continue to cook this for another night with added water and any veggies you need to use up, even ends. In the morning strain, discard, and freeze your broth with the date clearly marked on it for use later. It is full of minerals from the bone and makes an incredibly tasty base for pea or lentil or potato or hot pot soup.
The pork is best served with dijon mustard or mustard horseradish blend and some nice, fresh salad and roasted root veggies like turnip or carrots. Enjoy!
