Pan Fried Pork with Sage, Apricots
Soak the sliced apricots in the white wine vinegar, some olive oil and some sage for 1 hour.
Heat the olive oil in a large frying pan.
Pan fry the pork loin steaks very lightly on both sides.
Add the garlic, mustard, wine and vegetable stock, lemon juice, sage and salt and pepper and apricots.
Reduce by half and allow to simmer for up to 5 minutes (longer depends on thickness of steaks).
