Cut the potatoes into 1/2 inch pieces. Place in a medium, microwave-safe bowl. Cover the bowl of potatoes tightly with plastic wrap, keeping one edge slightly open as a vent.
Place bowl of potatoes in the microwave. Heat on high until tender, about 5 minutes.
Heat a large saute pan over medium heat. Add olive oil and butter.
Once butter is melted and oil is hot, add the sliced onions and dried thyme. Crush the thyme between your fingertips when you add it to the pan. Cook until the onions start to caramelize, about 3-4 minutes. Stir often.
Once the onions have started to caramelize, use a slotted spoon to transfer the potatoes from the bowl to the pan. Season the potatoes and onions with salt and pepper. Toss to coat, then cook until potatoes are crispy and slightly golden brown, about 5-7 minutes. Stir often.
Transfer the pan-fried potatoes to a serving platter or dinner plates. Serve warm!
