1) Slice zucchini and onion. Season with salt. And add to heated grill pan. Cook zucchini for 1.5 minutes on each side (or until it turn to a nice light-golden brown). Remove vegetables from pan and set aside.
2) Add the shrimp to the grill pan. Season with salt and pepper. Squeeze lemon over shrimp (you don't need much, just a squirt. Too much lemon will confuse your palate and affect the taste of the zucchini). Cook shrimp for 1 minute on each side
3) Tip in vegetables and turn/mix, just enough to reheat the veggies (approx 1 min).
4) Remove from heat and enjoy!
