Just yum. Kids loved it. Took a bit of time to make because of the three different parts coming together, but it was worth it!! Hopefully it will get easier as I make it more frequently.
APPLE-BACON HASH:
1. Cook bacon in a large skillet over medium heat until crisp and browned, about 10 minutes. Drain on paper towels and reserve bacon fat - will need about 4 tablespoons.
2. Heat butter and 2 tablespoons bacon fat over medium heat. Add potato, onion, garlic, and apple; cook until lightly browned, about 10 minutes. Remove from heat and stir in the maple syrup, salt, and pepper. Keep warm.
PORK CHOPS:
1. Heat remaining bacon fat in the skillet over medium heat. Season pork chops with salt and pepper. Add to skillet and cover. Cook, turning occasionally until golden brown and cooked through, about 15 minutes total. Transfer the chops to a plate and tent with foil to rest and keep warm.
MAPLE GRAVY:
1. Pour off all but 1 tbsp. of the pan drippings from the skillet. Whisk flour into the pan drippings and let bubble over medium heat for 1 minute.
2. Whisk in chicken stock, maple syrup, and cream and bring to a boil. Cook, whisking often, until mixture reduces and thickens, about 2 minutes. Season with salt and pepper.
TO SERVE, crumble the bacon into the hash. Serve chops hot with the hash and sauce.
Make sure you don't overcook the chops. Letting them sit will help them to stay juicy.
