1. Season scallops with salt and pepper; dust lightly with pan-searing flour. Heat olive oil in pan on med-high; add scallops. Sear until golden brown 2-3 min. Turn scallops.
2. Reduce heat to med-low. Cook 2-3 min, until internal temp reaches 120. Tip-Insert thermometer halfway into thickest part of seafood.
3. Add butter and baste scallops, 1-2 minute until internal temp reaches 130.
4. Let scallops rest 2 min; serve with sauce.
