Sirlon Steak w/Chimichurri Sauce, pan fried with green beans and sliced baked potato
Preheat oven to 425 F.
Slice potatoes length wise with each slice being 3-4 mm. Drizzle with olive oil, salt and pepper. Slice cloves of garlic and stuff potato. Place in baking sheet and put into center of oven.
When 5 min left on potatoes, chop the tablespoons of butter, place on top of potato and put under broiler for 5 min.
Heat pan med-high. drizzle Extra Virgen Olive Oil (about 1.5 tablespoons). Season steak with salt and pepper. Place season side down. Season other side. Cook each side for 5 min or until cooked to taste.
Heat another pan with EVOO and 1 tablespoon of butter. Fold in green beans and season with salt, pepper and chopped garlic clove.
Chimichurri Sauce: Combine EVOO, parsley, 2 garlic cloves, cilantro and lime juice in blender. Puree.
