1. Peel and dice apples.
2. Cook apples, orange juice, butter, dried fruit and cinnamon over low heat until apples are soft and beginning to get saucy.
3. Remove apple mixture from heat and allow to cool. Meanwhile, prepare pancake batter. I prefer to use Aunt Jamima Complete Buttermilk Pancakes- All you do is add water!
4. Combine cooled apple mixture with pancake batter. Bake in greased casserole dish at 375 degrees for about 40 minutes or until a toothpick inserted into the middle comes out clean.
*You can add your own touches like pecans, walnuts, chocolate chips etc.
