Traditional homemade pancakes served every Sunday morning
Sift together dry ingredients. Combine milk, egg, and salad oil and stir. Add to dry ingredients, stiring just until moistened. Bake on hot griddle. When bubbles form and pop, flip. Makes eight 4-inch pancakes.
Feather pancakes: For fluffier pancakes, decrease flour to 1 cup. Increase baking powder and sugar to 2 Tablespoons EACH. Mix & cook as directed above.
I usually use 1/4 cup of whole wheat flour and 1 cup of white flour when I make these. Can also add 1 T. of wheat germ; or sprinkle with blueberries (about 1-2 T.) with first side forms first bubbles. Delicious!
