This recipe was used often at our Bed and Breakfast and was a favorite of guests.
PANCAKES: Sift together flours, baking powder, sugar, and salt. Combine egg, milk and canola oil; add to ddry ingredients, stirring just till flour is moistened. (Batter will be lumpy.) Bake on hot griddle. Makes about eight 5-inch pancakes.
ORANGE-RUM BANANAS: Heat rum, sugar, butter and orange juice in a large skillet until the butter is melted. Add the bananas. Bring to a boil over medium heat, then lower the heat so the sauce is bubbling gently. Cook until the bananas are softened slightly. Serve over pancakes.
Great to serve with bacon and a glass of Orange Glorious
