Beat together egg, water (or milk) and flour until smooth. Stir in asparagus (other suggestions include cooked chicken, olives, berries, squid, cucumber, pears or tomatoes).
Season to taste with salt and pepper for savory pancakes or sugar for sweet.
Heat butter or olive oil in large skillet over medium heat and spoon 8 pancakes onto hot surface. Cook, turning once until golden, approximately 2-3 minutes each side.
