Heat griddle to 350.
Combine dry ingredients in a bowl.
Add milk, egg, melted butter and vanilla extract to the dry ingredients. Mix well. Not necessary to remove all lumps.
Pour onto griddle in small portions. It is ready to turn when small bubbles appear and burst. The colour should be golden brown when flipped.
Optional: fresh fruit can be added to batter e.g crushed mango or banana etc.
Serve with syrup or fruit.
