Heat a medium-sized fry pan. Add olive oil and warm for a few minutes. Add chopped onions, sprinkle lightly with salt and pepper and cook for about 10 minutes or until onions are clear. Stir in pancetta and asparagus and heat for a few minutes. Next, stir in chopped eggs. Heat until all ingredients are warm.
Heat TJ's Hollandaise sauce in the microwave for 30 seconds and stir to mix.
Serve Hollandaise sauce on the side. Each person can sprinkle as much sauce as they like over the egg mixture.
