the pail to a boil over medium-high beat and simmer, whisking occasionally, for 11 minutes,

To make the sesame bread crumbs, combine the bread crumbs, sesame seeds, and 2 tea--
spoons of the Cajun seasoning in a pan large enough to hold the chicken breasts. Set aside.
Place a chicken breast on a cutting board. With a sharp knife, carefully butterfly the breast by slicing across the breast horizontally from the thinner end toward the thicker portion without cutting all the way through it. Open the chicken as if it were one large piece, place it between 2 pieces of plastic wrap; using a meat mallet, pound it to a thickness of 1/4 inch. Continue with the remaining pieces. Transfer the chicken to a jelly roll pan and season both sides of the meat with 1/2 teaspoon Cajun seasoning.
Place the seasoned flour in a medium-sized pan. Beat the eggs, water, and remaining
1/4 teaspoon Cajun seasoning in a pie plate.
