Lemon Butter - combine clarified butter, clam juice, white wine, garlic, shallots and lemon juice in a small saucepan and simmer over medium heat for 3 minutes. Add chilled butter and stir until butter has melted and blended in. Continue to simmer letting sauce reduce and thicken slightly. Remove from heat, stir in parsley and season to taste with salt and pepper. Keep Lemon Abutter warm while cooking oysters.
Oysters - in a frying pan, heat the olive oil over medium-high heat. Shake excess flour off oysters and carefully place them in frying pan. Fry until one side is golden brown, then turn, season with salt and pepper and fry until other side is golden brown (approximately 1 minute per side).
Place oysters on a serving platter and cover with Lemon Butter. Serve immediately.
