?Stir together mustard and horseradish.
?To assemble, spread one side of each bread slice with the mustard mixture.
?Top half of the bread, mustard side up, with pastrami, cheese, and some of the cucumber mixture.
?Top with other piece of bread. Brush with olive oil.
?Heat a nonstick griddle pan or large skillet over medium heat.
?Place a sandwich on griddle. Top with wrapped brick.
?Grilled weighted sandwich for 3 minutes on each side or until cheese is melted.
?Serve with dressing to dip.
