Up to 1 day ahead:
MARINATE THE CUCUMBERS
& TOMATOES:
Halve the cucumbers lengthwise, then
thinly slice crosswise. Roughly chop the
olives. Halve the tomatoes. Combine in
a large bowl.
Add half the sherry vinegar; season with
salt and pepper and stir to combine.
Set aside to marinate, stirring occasionally,
at least 10 minutes.
MAKE THE PARMESAN DRESSING:
In a bowl, combine the mayonnaise,
parmesan cheese, remaining sherry
vinegar, and a drizzle of olive oil;
season with salt and pepper.
60 - 90 minutes before:
PREPARE VEGETABLES AND GRILL:
Onion: Peel and cut into 1/2-inch-thick rounds (keeping the layers intact). Drizzle with olive oil and season with salt and pepper. Grill 3 to 4 minutes per side.
Zucchini: Quarter lengthwise. Drizzle with olive oil and season with salt and pepper. Grill 3 to 5 minutes per side.
Halve baguettes horizontally. Drizzle with olive oil and season with salt and pepper. Grill 30 seconds to 1 minutes per side.
FINISH SALAD:
Chop the grilled vegetables and baguettes:
Onion: roughly chop
Remaining Zucchini: medium dice
Baguettes: medium dice
Roughly chop the leaves and stems of the
small bunch of parsley.
Transfer the marinated cucumbers and
tomatoes (including any liquid) to a large
serving bowl.
Add the chopped onion, diced zucchini,
pickled Peruvian peppers, parmesan
dressing, and half the chopped parsley.
Stir to thoroughly combine.
Just before serving, add the diced baguettes.
Stir to combine. Taste, then season with
salt and pepper if desired. Garnish with the
remaining chopped parsley.
