Papa Freddy's Morel 'n' Button Mushroom Pasta Sauce - South Country Comfort Food® - This is a wonderful thick 'n' tasty sauce for your choice of pasta.
In a large sauce pot/pan on the stove top warm butter and extra virgin olive oil - Bring burner to medium high heat and add onion, red 'n' green bell peppers, celery, garlic, and herbs and cook 'til the onion/pepper and garlic is tender. Slowly sprinkle tablespoon of flour in while stirring constantly with a wooden spoon.
Add the lean ground beef/pork and cook just 'til the meat's no longer pink. Make sure to crumble meat as it cooks so there's no large lumps/chunks of ground meat. Add the red cooking wine and let cook 'til the wine has nearly all evaporated. Reduce burner heat. - Keep checking and stir often so sauce doesn't stick to bottom of pan
- Soak the morel mushrooms in 1/2 cup of near boiling/hot beef broth for 15 minutes. Strain the morel mushrooms through a fine mesh bowl and reserve the beef broth in a bowl. Roughly chop the morel mushrooms into bite size pieces. Add about a 1/4 of a cup of the drained beef broth that was soaking the morel mushrooms to the sauce. Add your morel mushrooms and the whole tiny button mushrooms and then add all the the rest of the ingredients except optional fire weed chunks and bay leaf. Combine well.
Bring to a low boil while stirring constantly for about 4 or 5 minutes. Add the optional fire weed chunks -for extra thickening- Add large bay leaf and make sure it is submerged well into the sauce. Pop the lid on your sauce pan and reduce stove top burner to a medium low simmer stirring the sauce from the bottom of the sauce pan every so often for about two hours - Or cook 'til the sauce is nice and thick
- With a slotted spoon remove fire weed stocks and bay leaf.
Enjoy over pasta of your choice. Garnish with your choice of Italian herbs.
The longer the cook, the thicker the sauce!
