In stand mixing bowl mix yeast, 1 tsp sugar and warm water together and let sit until activated. add and mix remaining sugar, 3/4's of the butter, milk, eggs, and salt. on low speed add flour slowly until dough comes together, add more flour if necessary. knead for 3 minutes. oil a mixing bowl and let stand until doubled in size. Flip dough onto a floured surface and roll into an even 9x16 rectangle, cut lengthwise into 3 strips and then crosswise into 12 small strips. working with one piece at a time fold over so that there is some over lap and tuck the over lap under the roll. place onto a parchment lined baking sheet. form rows with each roll touching slightly but separate the rows themselves. bake in 350 degree oven for 18 minutes until browned, rotating once. brush with melted butter and sprinkle with sea salt.
