This recipe came from Savage's Bakery in Homewood, AL. It takes a while to make, but worth it.
Proof yeast in 1/2 cup warm water with 1 1/2 teaspoon of sugar (stir together, if top begins to foam, yeast is good). When the mixture foams, add the remaining 1/2 cup warm water and 1 3/4 cup flour. Let sponge (sit uncovered) until it collapses, about 1 to 1 1/2 hours. To the sponge, add all remaining ingredients, except flour and butter. Beat well. Add 1 3/4 cup flour. Knead well. Add remaining flour, as necessary. Cover and set overnight in refrigerator. Roll and cut with a biscuit cutter. Dip in melted butter. Fold in half. Place in pan with sides touching. Let rise until barely doubled. Bake 20 minutes at 375. Check after 10 minutes. Make sure rolls are a light golden brown before removing from oven.
