Suggest a better descriptionFirstly we prepare the lobster by cutting the losbter in half, lenghtways with a sharp knife. Take the legs off and with a pair of nut crackers remove the shell and place the flesh into a bowl. Remove the tail and chop into sliced and add to the claw meat. Remove the head meat and throw away. Season with salt and pepper and curry powder to your own taste and add about 2 tbsp of chopped basil. Place the meat back into the shell and pour tbe cream over the flesh meat. Top the lobster with the grated parmesan cheese and leave to one side. Cut the potatoes into large chips and place in the deep fryer to cook on a high heat for about 5 minutes, until nice and golden brown. While this is cooking place the lobsters under the grill to colour the cheese. To make the mayonnaise place the lime juice and zest in a bowl with the mayonnaise and the finely diced red chilli. Remove the lobsters from the grill and place on 2 plates. Serve the chips and the dip on the side.
