Heat oil in skillet over med-high, cook bacon, onion, garlic until tender. Cut potatoes in half, scoop out pulp and save. Mash pulp with fork, stir in cheese and sage. Add to onion mixture, stir well. Spoon potato mix into shell-skin. Arrange stuffed potatoes onto baking sheet and broil 3-4 inches from the heat for about 3 minutes or until lightly browned. Serve warm.
Russet Potatoes can be used for new take on potato skins.
