Cut one head of cauliflower into florets and place in a large bowl. Add the onion, thyme*, garlic, olive oil, and sprinkle with salt and pepper. Toss to combine and spread onto a rimmed baking sheet.
Roast, tossing occasionally, until almost tender, 35 minutes or so. Sprinkle with parmesan, toss and roast until tender, 10 more minutes.
*I used dried thyme - just sprinkling over the cauliflower.
