Wonderful potatoes that make a great side to any meal.
1. In medium size soup pot, add water and potatoes.
2. Cover with vented lid, bring to boil.
3. Lower heat to medium, continue boiling until potatoes are fork tender.
4. Drain liquid.
5. Add butter and parsley, stirring well.
6. Season with salt and pepper to taste.
