These individual potato pies can be made a day in advance, stored in the refrigerator and reheated just before serving. Alternatively the potato filling can be baked in a 6 cup casserole and reheated in a 325 degree oven for about 40 minutes or until heated through.
Cheddar Pastry:
In mixing bowl, or using food processor , combine flour and salt. Mix in butter until mixture resembles coarse crumbs, mix in cheese. Stirring briskly with fork or while processor is running, gradually add enough water, 1 tbsp at a time to four mixture to make dough hold together. Press into ball, wrap in plastic and refrigerate for at least 30 minutes before rolling.
Roll out pastry to desired thickness, about 1/8 inch. Cut out out 4 inch rounds and gently fit into large muffin tins. Refrigerate until ready to use.
Potato Filling:
Place potatoes in large saucepan of cold salted water. Bring to boil over medium-high heat, cover and cook over low heat until tender about 20 minutes. Drain, shake pan over low heat for a few minutes to dry potatoes, mash potatoes. Add milk, sour cream, butter and salt. Using masher, mix until well blended (never use electric miser to mash potatoes, they will become like glue). Stir in cheese, green onions, and pepper to taste. Taste and adjust seasoning. Let potato mixture cool before filling pastry-lined muffin tins with it. Drizzle with melted butter. Bake at 425 degrees for 20 minutes or until golden brown.
