A pasta recipe created by my uncle for my bridal shower recipe contest.
Preheat the oven to 450 degrees.
Slice the fresh tomatoes in 1/2" to 3/4" slices and arrange on a baking pan (11"X15"). The baking sheet needs sides, or you''ll drip goo.
Drain and rough chop the canned tomatoes and arrange in pan in single layer.
Peel and rough chop the garlic--scatter over the tomatoes, then scatter the oregano over them as well.
Drizzle olive oil over the lot, then add salt and pepper to taste, as well as hot pepper if wished.
Place baking pan into oven for 35 minutes. it will smoke and smit, but let the mixture deydrate in the oven. Black edges will develop on the tomatoes and garlic.
Boil water and cook your favorite pasta, 1 lb.
Drain pasta, then chunk up the tomato mixture into bite-sized pieces and toss with pasta.
Add parmesan as desired.
