Suggest a better descriptionBoil tomatoes until you can remove the skins. Cook noodles al dente. Dice and brown eggplant in olive oil (I prefer to peel the eggplant, but that is personal preference). Mix all ingredients except noodles and cheese and simmer for a few minutes, serve over noodles and top with ricotta cheese. You can also cook the ricotta cheese in the sauce towards the end of the process. I prefer to put the fresh ricotta cheese on top after it's served.
