Cook bacon in 1/2 cup of water until evaporated about 8 minutes. Then brown the bacon for another 8 minutes....add the garlic and sauté briefly. Pour this mixture through a sieve and reserve the bacon/garlic and 1 tbl of the fat separately Combine the eggs and cheese with the tbl of bacon fat and pepper.
Bring the water to a boil, add the salt and cook pasta until it is al dente. Reserve one cup of the pasta water and strain the rest of the hot water into your mixing bowl. This will heat the bowl and aid with the 'cooking' of the sauce. Mix a half cup of the pasta water into the egg/cheese mixture. Pour hot water out of bowl, put the pasta in and add the egg mixture. Stir-toss for 2-3 minutes and then add the bacon and toss a bit more. If it is too thick add a bit more pasta water and toss some more. Serve with additional grated cheese.
The water you boil the pasta in is critical.... you want the water to be very starchy as this makes the sauce silky and yummy without all the fat. This is one of our favourite pasta recipes.
